Meet Chef Nick

This week our story comes from one of the male members of our Get Fit Family - so glad he shared his inspirational story!
   

     I am a 54 year old male, who was overweight my entire life. I was a Chef and always worked in the food business. I have always been interested and knowledgeable in nutrition. However, I could not apply this knowledge to my personal life. I decided at 350 pounds and 50 years of age that I have had enough of this nonsense. My feet, ankles, and knees always ached. I have always worked on my feet 10 to 12 hours a day. I had high blood pressure. I am a very lucky person to have abused my body for as long as I did without more serous consequences. I attribute this to my knowledge of nutrition. I ate a lot of food, but some of my choices were better than the average obese person.
I needed to take back my life before I did not have that option. I have 2 biological sons and 1 non biological son, 2 beautiful grandchildren and a wife that I love very much, and want to be there for. My wife and I decided to do this in a joint venture with my sister.
      In November of 2008 we decided to join a gym an hire a Professional Fitness Trainer. A very young ,energetic personal trainer. We love his style, his encouragement, his humor, his knowledge, and his love and passion for his profession. At 54 years of age, and my wife 61 years of age, we are the healthiest we have ever been. I have lost 105 pounds, and my wife has lost 85 pounds. We continue to life our new healthy lifestyle, working out 3 to 4 days a week with our trainer, yoga classes, and we have started participating in 5k races with 5 under our belt.
     My health update: I am off all blood pressure medication, I am more active than I have ever been my entire life. We have belonged to gyms before abs tried many weight loss programs with no success. THIS IS NOW A WAY WE LIVE OUR LIFE'S DAY TO DAY. THINK LIKE A HEALTHY PERSON, EXERCISE DAILY, AND LOVE LIFE AGAIN



Because our story came from a chef, i thought it would be nice to include a clean eating recipe. You can find more at Clean Living Recipes on facebook, author Andrea Graf Nolte. These can be made ahead for breakfast or snacks.


Omelette Muffins
serves 4, 2 servings each

paper muffin liners
8 eggs
1/8 cup water
8oz cooked meat (turkey, beef, or bison crumbles)
2 cups diced vegetables (asparagus, peppers, onions, broccoli work well, but use what's on hand)
1/4 tsp sea salt
1/8 tsp ground pepper
Preheat oven to 350℉.
Line muffin pan with liners. Fill any remaining muffin cups with 1" of water, so they do not scorch while baking.
Beat the eggs in a medium bowl and add meat, vegetables, salt, ground pepper, and any other ingredients you wish to add.
Pour mixture into the muffin cups.
Bake for 18-20 minutes.

This is my brother and I am so very proud of him! He is an awesome man but the best brother in the world. He has always been my big brother. Now I can just call him my older brother. This has been a long road but the ride gets easier and easier...never give up and just do it. It is never ever too late! I have witness it first hand!
