Cantaloupe: Provides more beta-carotene than any other melon. One cup of cantaloupe provides 108% of the daily value for vitamin A.  The benefits of eating cantaloupe include preserving eyesight, supporting immunity, enhancing sun protection and reducing the risk of several types of cancer. Warning: Scrub the cantaloupe thoroughly with a vegetable brush, under running water before slicing to prevent risk of Salmonella contaminating the flesh.
